The chocolate style of my childhood memories is a traditional American chocolate. It's sweet milk chocolate with a smooth clean taste. The American Style follows that tradition with a touch more cocoa in it so the chocolate taste is pronounced and balanced in its sweetness for adults.
Lighter and smoother than the European or Amsterdam and stronger than the Swiss, it is a good old-fashioned traditional chocolate. It doesnt need fancy flavors or spices because it has such a great flavor just in itself. After the American Tradition.
When I was a boy, opening up an American-styled chocolate bar meant you were going to have a good time. I would tremble with anticipation as I greedily peeled away the silver foil from the bar. You could really smell the fragrance in those days. You didnít even have to hold it up to your nose, the scent just rose to meet you. And good cocoa always has a great scent.
As a child on the days shortly before Halloween, I would lay on my bed fantasizing about coming home with bags full of candy like a reverse Santa. All I ever came back with was a mostly empty pillowcase, but thatís not the point. When I was a boy, plain chocolate was incredible and worthy of those kinds of dreams.
As an adult, I grew more sophisticated and so did my chocolate tastes. Then one day, I was looking at a certain American-styled chocolate bar and remembering my childhood growing up in the stark Mojave Desert of Southern California. In a moment of nostalgia I thought, "Hey, I used to be really crazy about that. It was so great. Why did I ever stop eating it?"
Finally, I got the bar and boy, was I ever disappointed. It just tasted cheap, waxy, and false. Where was the chocolate of my memories and my childhood? Where was the chocolate worthy of my fevered anticipation? Was I an idiot when I was a kid? Where was the rapturous feeling of joy that made me ride my bike all across town through the hot desert wind and tumbleweeds to get to the store to buy candy? I wanted my chocolate-smeared childhood back.
Holy Chocolate American may not actually be like any American candy bar chocolate that ever really existed. It is made according to my memory. It is made according to what I think American milk chocolate should have always been. Bold, honest, sweet, unpretentious, fun, and satisfying -- the chocolate of my childhood memories. After you make it, just sit down for a moment, let it cool for a few minutes and enjoy the aroma of the cocoa, and then take a sip and see if it's what you remember too.
